Simply amazing dish!Mum we fancy some meatballs tonight. "OK" I say. I am about to start cooking, I open the fridge and see 1 half courgette and 1 half aubergine. So I add them to my meatballs in an elegant way.
300 gram of mince meat
1 large egg
2 slices of Challah bread (or farmhouse or any tasty white bread)

10-12 Parsley leaves
10-12 Coriander leaves
1 grated onion
t-spoon of garlic purée
1 t-spoon Sweet paprika
Ground black pepper
Ground cumin
Salt
Wet the slices of bread and squeeze the water out. Grate to create wet breadcrumbs and add to the meat together with the rest of the ingredients, mix well.
Create the balls
Courgette
Aubergine
beaten egg
flour

Cut the courgettes and aubergine into 2 cm slice and then make a sandwich by cutting down the middle carefully, leaving the 2 slices attached at the bottom.
Fill the courgette and aubergine sandwiches with the mince mix.
Make balls from the rest of the mince.

Coat the sandwiches and meat
balls in beaten egg and then in flour.
Fry with some olive oil
Remove form the pan into a plate and set aside.
Sauce
large ripe tomato, grated
1-2 cloves of garlic chopped
1/2 cup of passata
1/2 t-spoon of sweet paprika
1/2 t-spoon of hot paprika
1/2 cup of chicken stock
Ground cumin, ground pepper and ground turmeric - Mixed to create a spice mix
In the same pan, add a little olive oil.
Fry the chopped garlic for about 30 seconds
Add the grated tomato
Season with salt and pepper and mix.
Arrange the meatballs and sandwiches on top.

Mix the rest of the ingredients (apart form the spice mix)together and pour over the meat balls, add a little water if necessary.Give the pan a gentle shake.
Season with some ground cumin, ground pepper and ground turmeric.
Give the pan a shake about gently and simmer for 10 minutes
Before serving you can sprinkle with chopped coriander.
